    Three jars of quick pickle for Vietnamese summer rolls. The pickling liquid is 1 cup/250mL white vinegar, 1 cup/200g sugar, and 1 tablespoon fine sea salt. Warm the liquid in microwave for a minute, stir to dissolve. Pack jars with julienned cucumbers, carrots, or daikons. Pour as much pickling liquid as necessary to cover. Chill in fridge. It’ll be ready in about an hour. Stays fresh in fridge for about two weeks.
