Kicked off my weekend with a batch of barbecued beans in smoky chipotle bacon homemade barbecue sauce. The recipe comes from America’s Test Kitchen Slow Cooker Revolution. My slow cooker fits remarkably well with my living and cooking style because I tend to cook dishes ahead of time. Bean is a key part of my diet and I absolutely adore using Rancho Gordo’s yellow eye peas for this dish. So creamy and meaty! I didn’t even need to soak the beans as they cooked overnight along with chipotle barbecue sauce, bacon, onion, garlic, coffee, and brown sugar.
As for the wine glass? Well, gotta keep it classy, right? The beans will be enjoyed later with barbecue beef brisket and probably some coleslaw. I think dinner for next week is taken care of.
